The best way to enjoy it

  • Grill in the order of the best cuts: Beef Outside Skirt first, then Top Blade, Beef Rib Finger Meat, and finally Sliced Beef Belly. Split the meat into several rounds so it is always hot.
  • Beef Outside Skirt, Top Blade and Beef Rib Finger Meat need strong charcoal heat from the start to lock in their bold flavor and juices.
  • Each piece needs only about 1 minute per side, until just cooked through. Overcooked beef turns tough, dry and hard, and loses its rich flavor.
